Pita Breads
500g flour
6g salt
10g sugar
10g dry yeast
300 ml warm water
30 ml oil
mix all ingredients in a mixer till smooth .
Rest for 20 min to proof
Roll into balls , roll out into rounds proof again 10 mins
set over 250*C
Place pitas on baking sheet as soon as pop up take out of oven.

1 ripe avo
lemon juice to taste
Garlic powder to taste
salt to taste
Mash all ingredients together to required texture and taste.

1 tin chickpeas drained and skins removed
1/4 cup lemon juice
1/2 cup tachini
salt to taste
cumin to taste
olive oil
Blitz all ingredients in a food processor till smooth..
For pepper Hummus chop up some pickled peppers and blitz into some of the Hummus.

Pickled cucumbers
2 packs baby cucumbers
1 cup water
2 Tbs salt
1 Tbs Sugar
2 cups water
2 cloves garlic
2 Tbs black pepper
Boil all ingredients together , once boiled take off heat place cucumbers in heated mixture .
Leave to pickle for 2 days.

Pickled peppers
1 1/2 cups water
1 cup vinegar
1 tsp salt
3 Tbs sweet chilli sauce
5 bay leaves
Few cloves of garlic approx 5
Boil all ingredients together take off heat.
Place peppers in and leave to cool .
Package in jars to marinate for minimum 2 days

Falafel balls
a cup and a half of humus beans that have been in a bowl of water for about 12 hours
bunch of parsley
bunch of coriander(optional)
small onion, peeled
5 garlic teeth
2 full spoons of bread crumbs
3-5 cups of water
1 teaspoon of bicarbonate soda
1 teaspoon of cumin
1 teaspoon paprika
1 teaspoon salt
1/4 teaspoon pepper
Put in mixer the humus, coriander, parsley, onion and garlic and mix together
add in bread crumbs and put in spices
add water in gradually
put in fridge for 30 minutes
when you take out of fridge put in bicarbonate and mix well
make into balls and fry in deep oil

Roasted Bay tomatoes
Place on baking paper
6 baby tomatoes
Olive oil
Garlic flakes
Bake in a 200*C air fryer till blistered and softened.

Roasted chickpeas
Place chickpeas on baking paper
Sprinkle with olive oil and Zatar.
Bake in 200*C air fryer till crisp and roasted.

2 Brinjals sliced
Fry in oil
add salt and pepper to taste
Place in oil marinated with garlic and parsley

Construct platter and enjoy
