Crystal fruit roll

Serves: 6
Ingredients,
•12 pcs of rice paper wrapper
•24 prawns
•10 fruits, sliced
•150g of vermercelli rice noodles

For the sauce,
1.Peanut butter sauce
•2 tablespoons of peanut butter
•1 tablespoons of vinigar
•1 tablespoons of soya sauce
•3 tablespoons of water

2.Sweet chilli sauce
•3 teaspoons of sugar
•2 tablespoons of water
•3 teaspoons of red chilli
•2 teaspoons of salt
•3 tablespoons of garlic

Instructions,
1. Making the sauce by mixing all the ingredients together, and chill in fridge before serve.
2. Soak the vermercilli rice noodles in hot water for 10 minutes, then cook in boiling water for a few minutes, then drain well.
3. Place one rice paper wrapper into the hot water for around twenty seconds or until soft, then place on a board. Put the fruits in the lower part of the wrapper, don’t fill it.
4. Lift the edge of the rice paper wrapper over the filling in position with your fingers, start rolling up tightly. In halfway, fold the ends of the rice paper in and over the filling so that it is completely enclosed. Keep on rolling tightly till the end. Serve with sauce.
