Gaby's Irresistible Banana Cake

Ingredients
125g butter
1 cup castor sugar (white or brown sugar is okay)
2 cups flour
2 large eggs
3-4 large bananas, mashed
1 grated carrot
1 tsp vanilla essence
1 tsp bicarbonate of soda
1 tsp baking powder
1 tsp mixed spice or cinnamon
Sprinkle of honey (optional)
Cream Cheese Icing optional

Method
Preheat oven to 175° C
Cream butter and sugar together. Add eggs one at a time and beat well.
Add bananas and vanilla and fold in all the dry ingredients.
Drizzle some honey over the cake before baking.
Bake in a greased loaf or cake tin for approximately 45 min.
Take care not to over cook as this cake is delicious when moist. Let cake completely cool.
Before serving, sieve some icing sugar over and top with blueberries and raspberries and optional cream cheese icing see below. Finish with Pistachios & banana chips

Cream a Cheese Icing:
160g butter - room temperature
320g icing sugar - sifted
130g cream cheese
1 lemon zest
Cream butter,
Add icing sugar and mix well
Add cream cheese
Add lemon zest

Equipment: Bowl, mixer, spatula and 1-2 greased baking tin/s
