Teia’s fruit eclairs

INGREDIENTS
1 Cup of milk
1/2 cup of butter
1/4 teaspoon of salt
1 cup of flour
4 eggs room temperature
Whipped cream
Melted chocolate
Fresh Fruit


STEPS TO MAKE FRUITY ECLAIRS
1. First preheat the oven to 220c then butter and line cookie sheet, set aside.
2. Then heat the milk , butter, and salt over medium heat. When the butter is melted, add the flour all at once and beat it with a wooden spoon untainted the mixture comes together and forms a dough.
3. Cook the dough, stirring constantly over low heat for 2 minutes or until the dough begins to coat the bottom of the pan.
4. Then take the pan off the heat and allow the dough to cool for a little. Add in the eggs and stir using a wooden spoon until the eggs are fully mixed into a thick paste.
5. Spoon the pastry on to the baking sheet about 3 centimeters you should have about 18 when you are done.
6. Then with a wet finger lightly press down the on the tip of each eclair.
7. Bake for 20 minutes, or until they are lightly browned, then turn off the oven and let the eclairs sit for another 5 minutes.
8. Remove the eclairs from the oven and allow to cool to room temperature, fill with any fruit you love add cream and top with melted chocolate.
