Blueberry & Banana Cake with Cream Cheese Frosting

Blueberry & Banana Cake
225g Butter
4 Eggs (Separated)
2.5ml Vanilla Essence
15ml Baking Powder
2.5ml Salt
500ml Castor Sugar
750ml Flour
250ml Water
1 cup Blueberries(Fresh or Frozen)
2 Ripened Bananas (Mashed)
Method
1. Pre-heat Oven 180'C.
2. Cream Butter & Sugar until light and creamy. Add vanilla and egg yolks one at a time once mixed in add the banana.
3. In a separate bowl sieve the flour, baking powder & salt.
4. Fold into egg mixture, with water into two batches, beat the egg whites until stiff and fold into cake mixture, just before baking add the Blueberries.
5. In a long, flat tin lined with baking paper, pour the mixture into tin and bake for 30-45 minutes or until golden brown.
