Very Berry Cherry
For the cake
1 cup butter
2 cups sugar
4 large eggs
2 tsp vanilla essence
3 cups AP Flour
1 tbsp baking powder
1/2 tsp salt
1 cup milk
1) cream butter and sugar together until light and fluffy.
2) add eggs one at a time until fully incorporated.
3) add vanilla essence
4) in a separate bowl, combine the dry ingredients.
5) add the dry ingredients in 3rds to the butter mixture alternating with the gradual addition of milk until well combined.
6) pour the batter into two round cake pans and bake at 180 degrees for 30 to 40 minutes.
For the butter cream
1 cup butter
2 cups icing sugar
10 ml vanilla essence.
Whip all the ingredients together until light and fluffy
For the compote
440g mixed berries
60 ml sugar
